Ko-Gyuto 175mm Kaimuki Handle made from 3 layersThis Ko Gyuto feature a medium size blade, good distal taper, and thin tip. Thin blade with flat profile with a slight curve toward the tip. The san ma is made from 52100 steel core with soft iron cladding. Forged to shape and to geometry the blade is ground on water cooled grinding wheel with a stone finish.
